LINCOLN, Mrs. D.A. Boston School Kitchen Text-Book. Lessons in Cooking For the Use of Classes in Public and Industrial Schools.
Boston: Little, Brown, and Company, 1899. Later edition (first published 1887). 8vo., orig. tan cloth with pictorial decoration and lettering in red, (xxviii), (238), (6)pp. ads. With some illustrations in the text. A trace of rubbing to the spine ends o/w a near fine copy of a pretty book.
As the Superintendent of the Boston Public Schools notes in the preface, this is an instructional book rather than a cookbook, as she states ‘...if cooking is to have a place among school exercises, the text-book ought to be, not a cook-book, but a book giving the reasons with first principles...the substance of all the lessons has been worked out in the cooking class-rooms or school kitchens connected with the Boston public schools.' The Boston School Kitchen was founded and funded by Mrs. Mary Hemenway in 1885, and it was through this school that cooking schools were introduced into the Boston Public School system. Mrs. D.A. Lincoln was a teacher at the school and author of other books on cookery and a pioneer in the field of nutrition. The text begins with basic household management including "Rules for Housekeepers" "Rules for Cleaning Dishes," and two charts show "Average Composition of Some Common Foods" and "Food Materials Obtained for 25 cents." Included is a chapter of "Suggestions for Teachers" followed by twenty lessons that provide both food recipes and basic kitchen instructions.
